

- Heat the vegetable oil in a frying pan. Add peeled and chopped onion and garlic. Add the spices and fry everything together for 3–5 minutes.
- Then add the peeled and chopped carrot, pumpkin pulp and celery. Simmer over low heat, stirring occasionally, for 10–15 minutes. Add a little water, if required.
- Then add the chopped peppers and tomatoes. Add the tomato sauce if desired. Simmer until cooked through.
- Serve with greens and diced cheese. You can also put the vegetables and cheese under a grill for a couple of minutes, so that the cheese is melted well.
